Chinese Three Colour Steamed Eggs 三色蒸蛋

Making Three Colour Steamed Eggs is incredibly easy. All you need to do is mixing the eggs with water. This dish goes well with rice or porridge.
制作三色蛋非常简易,你只需要把蛋和水混合,这道菜肴是饭或粥的最佳搭配。

Three colour steam egg is a popular dish among Chinese families. 
三色蒸蛋是华人家庭其中一种著名的佳肴。
This homely egg dish made with 4 fresh hen's eggs, 2 preserved century eggs and 2 preserved salted eggs.
这家庭式的蒸蛋是由4粒甘榜鸡蛋、2粒皮蛋和2粒咸蛋组成的。

The ingredients are 4 hen's eggs, 2 preserved century eggs, 2 preserved salted eggs, some fined cut spring anion and celery.
材料是4粒甘榜鸡蛋、2粒皮蛋、2粒咸蛋和一些切碎青葱和芹菜。
Crack 4 hen's eggs and two preserved salted eggs into a bowl. Mix well with a tablespoons of cooking oil.
把4粒鸡蛋和2粒咸鸭蛋敲破,倒入碗里,再倒入一汤匙菜油混合均匀。
Cutting fresh celery into small slices.
把新鲜的芹菜切成小块状。
Cutting up spring onions on a chopping board.
在砧板上切青葱成小块状。
Lightly beat with a pair of chopsticks.
轻轻地用一双筷子拌打。
Girls, if you want to bring out the flavour, you can add in a teaspoon of sesame oil and soy sauce , a pinch of salt and a dash of pepper.
孩子,如果你想增添味道,可在蛋液加入一茶匙麻油、酱油、一小撮盐和胡椒粉。
2 salted egg yolk and 2 century egg.
2粒咸鸭蛋和2粒皮蛋。
Cut into chunks.
切成块状。 
Arrange the egg pieces on the steam plate before pouring in the egg mixture.
在还没有倒入蛋液前,把切成块状的蛋摆在蒸盘上。
Place a 3-leg steamer into a large wok which filled with boiling water.
锅里的水沸腾前,把一个蒸架摆在锅里。
Carefully place the plate on top of the steaming rack. Pour the eggs through a fine mesh sieve.
小心地把蒸盘放置在蒸架上,再把蛋液倒入细筛网过滤。

Ratio of the eggs and water should be 1:1.25.
鸡蛋液和水的比率是1:1.25.
Gently stir well.
轻轻地搅拌好。


Cover the steam plate with a plate to prevent water droplets from falling. It will result in uneven surface.
用一个铁盘盖在蒸盘上,以免水滴造成不均匀的表面。
Cover the lid and steam on medium heat for about 15-20 minutes.
把锅盖盖上,在中火上蒸三色蛋,大约15-20分钟。
Sprinkle with freshly chopped green onion and celery.
在三色蛋撒上新鲜的青葱和香菜。

Chinese Deep Fried Wonton 炸云吞

Who doesn’t love crunchy deep fried wonton? 
有谁不喜欢吃香脆炸云吞呢?
They are great as snacks or as accompaniment to rice.
炸云吞是很赞的零嘴或配以白饭的佳肴。
Water chestnuts add a delicious crunch to the wontons.
马蹄为云吞添了香脆的美味。
Dad and mom like to peel water chestnuts and eat as raw as they are. 
爸爸妈妈喜爱把马蹄削皮后生吃。

Mom washed and peeled ten of the chestnuts. Soak in salt water for 10 minutes. Rinse again.
妈妈把其中十个马蹄洗干净,削皮浸在盐水里10分钟,再清洗。
Then using a pair of kitchen scissors to cut a stalk of spring onion into pieces.
之后用一把厨房的剪刀把一束青葱剪成小块状。

Finely chop 6 pieces of red onions with a knife.
用一把刀把红葱头切成小块状。
Yes, girls. Mom is going to make deep fried wonton. The ingredients are 250 grams of minced pork, 10 pieces of finely chopped water chestnuts, 6 pieces of finely minced red onions, 1 stalk of spring onion pieces and 1 large egg.
是的,孩子,妈妈即将制作炸云吞,材料是250克猪肉末、10个切碎的马蹄、6个切碎红葱头,一束青葱碎及一粒大鸡蛋。

In a large bowl, mix all the ingredients.
在一个大碗里,混合全部材料。

Stir the ingredients until they are thoroughly combined.
搅拌材料一直到混合均匀。

Girls, to season the meat, you can add in 1 teaspoon of castor sugar, 1/2 teaspoon of salt, two tablespoons of cornstarch, a dash of pepper, 2 tablespoons of sesame oil and 4 tablespoons of Thai Oyster Sauce Maekrua.

Marinating is an act of soaking meat in order to improve flavor.
腌制是增添肉质美味的一种艺术。
Cover it with plastic wrap. Place into the fridge. Allow meat to marinate for at least 1 hour.
用保鲜膜包住再放进冰箱,让肉类腌制至少1小时。

Girls, when you are ready for wrapping wontons, prepare a bowl of water.
孩子,当你准备包裹云吞时,请准备一小碗水。
Store-bought wonton wrappers. RM2 for 50 pieces.
市场卖的云吞皮,50片只是2令吉而已。
Place 1 teaspoon of filling in the center of the wrapper.
把一茶匙的馅料放置云吞皮的中间。
Wet the bottom left corner of the wrapper. Hold both corners of the wrapper and fold them to the center.
先把左上角的云吞皮蘸上水,抓紧两个角再折到中间。
Bring the two corners together. Dap a little water and press firmly to seal.
把两个角落结合,沾一些水后压紧密封。

Fried wontons are shaped to resemble the type of ingots used in ancient China.
这些炸云吞被弄成类似古老中国时代使用的元宝。
Every wonton looks great when it puffed up.
每个云吞看起来很漂亮当被包得发胀。
Heat oil and fry 6 to 7 minutes or until golden.
弄热油,煎云吞6-7 分钟或直到金黄色。


Lined with paper towels to absorb excess oil.
铺上厨房吸油纸以吸取多余的油。
A plate of fried wontons ready to serve with sweet and sour sauce.

Sweet Corn Soup with Carrot and Potato 玉蜀黍萝卜马铃薯汤

A bowl of sweet potato, carrot and corn soup. It is perfect for a cold day. It contains a healthy dose of Vitamin A.
一碗马铃薯、萝卜和玉蜀黍汤是寒冷天气的完美选择,它拥有对有利我们健康的维他命A。

This Chinese soup is very nutritious. This recipe is for all who claim that they can't cook. It's so simple yet delicious。
这道华人风味的汤富有营养,这食谱特别留给不善烹饪的你我,这道佳肴既简易又美味。

Four fresh Pearl Corn which comes from Cameron Highlands.
四条来自金马伦高原的珍珠玉蜀黍。 
Chop the pearl corn into small segments.
把珍珠玉蜀黍斩成小段。
1340 gram of peeled potatoes.
1340 克削皮的马铃薯。
Girls, the way to keep peeled potatoes from turning brown is to submerge them in cold water.
孩子,避免削皮马铃薯变褐黄色的一个秘诀就是把马铃薯浸泡在冷水里。
Peel potato and cut into cubes.
把马铃薯削皮然后切成块状。

575 grams fresh carrot which cut into slices or cubes.
575克新鲜萝卜切成块状。

615g chicken breast boneless. Once the water is boiling, gently drop in the chicken meat.
615克无骨鸡胸肉。当水沸腾,轻轻把鸡肉放进沸水里。

Blanch until you see foamy impurities float to the top. Strain the water and rinse chicken in cold water.
用沸水把鸡胸肉烫白直到你看到泡沫杂质浮在水面上。把水过滤干净然后用冷水清洗鸡肉。

Girls,you can use lean pork, spare ribs or chicken breast for the meat base.

Bring a large pot of water to a boil.
把一锅水煮沸。

Put all prepared ingredients into a pot. Salt and pepper to taste.
把所有准备好的材料放进锅里,盐和胡椒调味。

Cook all the ingredients with lid on until boil. Then reduced heat to medium. Put the lid on the pot.
锅盖放置一边,待全部材料煮至沸腾,再转到中火,把锅盖盖上。

Simmer for 3 hours.
慢煮至3两个小时。
