Stir-Fried Eggpplants with Dried Shrimp 蒜香虾米炒茄子

Girls, there are many different ways you can flavour the eggplants. Above is a traditional Chinese recipe where the eggplants is first browned until golden by a quick deep-fry, then stir-fried together with minced garlic and dried shrimp.

There are many different types of eggplants around the world. They are vary in size and colours.
在这个世界上有很多不同种类的茄子,这些茄子各有不同的大小和颜色。
Girls, Chinese eggplants have a thinner skin. Larger or over mature eggplants will be more bitter than smaller just ripe eggplants.
孩子,华人的茄子有较薄的外皮,体积较大又过于成熟的茄子比体积小又刚成熟的茄子更多苦味。

Prepare three eggplants weigh 545g.
准备三条茄子,重量为545克。
Girls, If you are not deep frying immediately, do remember to soak eggplants in salt water for 30 minutes so that the flesh won't turn brown.
如果你不是马上炸茄子,请记得把茄子泡在盐水里30分钟,这样茄子才不会变成褐色。

Cutting the eggplants into long strips.
把茄子切成长条状。
 
Dried Shrimps 60g. Girls, better quality fresh shrimps gives a better color and the meat is firm. 
虾米60克。孩子,好素质的虾米颜色较悦目,肉质也较结实。

Clean the dried shrimp and remove the dirt. Then soak in hot water for 30 minutes.
清洗虾米然后除去肮脏的杂碎,接着浸泡在热水里30分钟。

Drain and chop soaked dried shrimps finely.
把浸泡后的虾米滤干后切碎。
Ready peeled garlic 55g. Garlic is an integral part of many savory dishes.
准备剥好皮的蒜头55克,蒜头是菜肴不可少的材料,它能为许多菜肴增添美味。
Mince garlic with a knife. Girls, you can mince with a knife or a garlic press.
把蒜头剁碎,孩子,你可用刀或者压蒜器。
Cutting few stalks of spring onion with a pair of kitchen scissors.
用一把厨房专用的剪刀把几束青葱剪开。

Cut spring onions into pieces.
把青葱剪成小块状。

All the ingredients had prepared. Getting ready to cook .
所有材料准备好了,好,可以下厨了。
Heat up oil in your wok for deep-frying. Girls, If you see a good deal of bubbles forming around the chopstick, the oil is ready for frying.
把锅里的油弄热以炸茄子,孩子,如果你把筷子放进热油里,发觉周围有泡沫出现,那么就可准备油炸的任务了。

Do not turn down the heat too much. If heat is not hot enough, the eggplant will begin to absorb too much oil.
记得别过于降低火的温度,如果火的温度不够,茄子会吸入更多的油。

Place the strips eggplants into the heated wok. Fry for 5 minutes or until its bottom part turn brown.
把片状的茄子放进热锅里,油炸5分钟或直到茄子变成浅褐色。


Add all the eggplants back in wok for a quick mix and fry. It can prevent the eggplant from soaking up too much oil.
把全部茄子再放入热油锅里然后快翻炒。这可避免茄子吸入太多的油。

Drain out the excess oil from the eggplants.Girls, do you like this beautiful, deep-coloured vegetable?
滤干茄子多余的油。孩子,你喜欢这些美丽又深紫色的菜吗?

Heat the wok with cooking oil and brown the garlic in medium heat.
在锅里弄热油,以中火把蒜米爆香。

Add in dried shrimp. Then fried eggplants. The strips of eggplants completely absorbed the taste and aroma of the dried shrimps.
加入虾米,再加入炸香的茄子,茄子会吸收虾米的味道与香气。

Add four tablespoon light soy sauce and four tablespoon dark soy sauce. Girls, When the eggplants has become slightly soft, add light soy sauce and dark soy sauce.
加入四汤匙的酱青和四汤匙黑酱青,孩子,当茄子稍柔软时,就加入酱汁。
Lastly add in one and half tablespoon sugar.
最后加入一汤匙半的白糖。

Hot Honey Lemon Tea 热蜜糖柠檬茶


Girls, do you want to make a quick honey lemon tea to soothe your throat when you have a cool?
孩子,当你患上感冒时,是否想在短时间内弄一杯蜜糖柠檬茶来舒缓你的喉咙呢?
Here are the simple steps to make hot honey lemon tea. Ready in less than 30 minutes.
这里有简单的步骤,在少过30分钟内就可完成任务。


Lemon juice helps us to combat cold and honey soothes the throat. 
柠檬汁帮助我们与感冒抗战,至于蜜糖则可舒缓喉咙疼痛。

Put 1200ml water into a pot. Place on the stove and bring to the boiling point. Drop one tea bag into the boiling water. (Girls, you can use 2-3 tea bags if you really like the strong tea taste. ) Let the tea infuse in the water for 6 to 8 minutes. 
把1200毫升的水放进锅里,在煤气炉上煮至沸腾,在沸水里放一包茶包(孩子,如果你喜爱更重的茶香味,你可用2-3包茶包)让茶水浸泡在水里6至8分钟。
Girls, you can make sweet tea with any kind of tea, but Lipton are mom's usual choice. After steeping tea bag in the hot water for 8 minutes, gently squeeze excess water from tea bag. Then remove the tea bag.
孩子,你可以选择任何牌子的茶包来弄这饮料,然而Lipton 是妈妈平日的选择。当茶包在热水里浸泡8分钟后,轻轻地把多余的水分挤出,然后把茶包拿掉。

Remove tea bag. Girls, be very careful not to overcook. Bitterness in tea is caused by overcooking.
取出茶包。孩子,不要把茶包煮过久,以免苦味渗进水里。
Add rock sugar if the water turned brown. Mom likes to use rock sugar for tea because it is the kind of sweetness where mom enjoyed the most.
当水变成茶褐色时,加入冰糖,妈妈很喜爱用冰糖因为这种甜味和茶配搭恰到好处。
Rock sugar sweetens tea without overwhelming the natural flavour of the tea.
冰糖的甜味不会夺去茶的自然香气。

Add in 70-80 g of rock sugar. Use low fire to boil until sugar dissolved. Increase sugar as needed to your sweetness level. 
加入70-80克的冰糖然后用小火煮至溶解,增加糖的分量如果你想要更甜。
Soak one lemon in a bowl of warm water with baking soda. Baking soda can remove the wax from the skin of the fruits.
把一个柠檬浸在一碗温水里加入泡打粉,泡打粉可以除去水果外皮的蜡质层。
Place the lemon on a cutting board and cut one half into four slices.
把柠檬放在砧板上然后把半粒柠檬切成四片。

Squeeze the juice from the other half into a bowl.
用另半个柠檬在碗里挤出柠檬汁。
Mix the fresh lemon juice into the hot tea.
把新鲜榨取的柠檬汁混合进热茶里。

Girls, before adding honey, wait for the lemon tea to cool down instead of hot.

Stir 60-70ml honey into the mixture.

Pour mixture into drinking glasses and serve.

Garnish with a lemon slice.

Butter Cookies 曲奇松饼


Girls, these butter cookies are incredibly easy to make. Only require a handful of ingredients that you definitely already have on hand.
孩子,这些曲奇饼非常容易做,只需要一些材料,而这些材料在家里随处可找到。

Let's be honest, who doesn't like a good cookie with a cup of tea.
有谁不想品尝好的曲奇饼伴随一杯好茶呢
The ingredients to make delicious butter cookies are 150g butter, 140g plain flour or superfine flour, 28g corn flour, 18g castard powder, 47g icing sugar, a teaspoon of vanilla extract and a 1/2 teaspoon of baking powder. (Mom double the recipe to make more cookies)
制作美味曲奇饼的材料是150克的牛油,140克普通面粉或低筋面粉,28克玉蜀黍粉,18克蛋黄粉,47克糖粉,一茶匙云尼拿香精和半茶匙发粉。(妈妈倍增食谱以做更多的松饼)

 Mom highly recommends using Golden Churn Butter as it makes the cookies more buttery and fragrant.
妈妈极力推荐你们用 Golden Churn 牛油因为这牌子的牛油可以做更奶油味及芳香的曲奇饼。
Cream butter and icing sugar until creamy in a electric mixer. Icing sugar is one of the most important ingredients in baking. Sieve icing sugar twice to get rid of lumps.
把牛油和糖粉放进搅拌器里搅拌至奶白色。糖粉是烘培其中一个重要的材料,糖粉过滤两次以除去块状物。

Add  one teaspoon of vanilla extract to the electric mixer.
在搅拌器里加入1茶匙的云尼拿香精。

In another bowl, sieve plain flour, corn flour, custard powder and baking powder. (Sieve all the dry ingredients twice.) Then add them to the mixture.
另一个大碗,过滤普通或低筋面粉、玉蜀黍粉、蛋黄粉和发粉,(所有干粉过滤两次),然后加入牛油和糖分的混合物里。
Add the dry ingredients to the mixture. Gently fold the dry ingredients using a spatula. Knead well to form a dough. Please do not over mix.
在混合物里加入干粉,以木匙温和地上下搅拌。用手捏成面团,切记不要搅拌过度。

两种不同性质的松饼
Girls, the same recipe can bake up into two completely different cookies. One is crispy (piping type) and the another one is buttery. ( crisscross type)
孩子,你可以用同样的食谱制作两种不同性质的曲奇饼,一种是香脆性(挤袋挤压),另一种是奶油松软型(用叉轻轻按压的交错型)。
Pipe cookie batter onto a baking tray.
把曲奇饼面团挤压在烘培盘上。

Pipe your desired patterns on the tray.
在烘盘上挤压我们喜爱的形状。

Or wrap the dough in the plastic wrap. Let the dough rest in the refrigerator 1 to 2 hours or overnight.
或者用保鲜膜把面团包裹,再放进冰箱休息1-2小时或隔一夜。
After one hour, take the dough out of the refrigerator and shape dough into small balls.
一个小时后,从冰箱拿出面团,再揉成小球状。
Use a fork to make nice crisscross designs.
用叉在松饼上轻轻按压出美丽的交错线条。

These cookies take just minutes of work.They are waiting to be baked.
