Ma Lai Gao 马来糕

Ma Lai Gao is a traditional Cantonese steamed sponge cake which served in many dim sum restaurants.
马来糕是一种广东人的传统蒸糕,它是许多点心店的桌上美食。

There are many version of Ma Lai Gao. Some are brownish and some are yellowish. Ma Lai Gao is perfect with a cup of Chinese tea.
马来糕有很多版本,有些较深褐色,有些则比较黄色。马来糕配以一杯中国茶真是好得无比。

Mah Lai Goh is also called Malay cake or Malaysian steamed cake. When it is fresh out of the steamer, it smells incredible.
马来糕也被称为马来蛋糕或马来西亚蒸糕。当它从蒸笼热腾腾拿出来时,香味很赞。

180g castor sugar and 100g plain water. Before you begin to cook caramel, make sure you have everything ready to go.
180克细糖和100克白开水。在还没有煮焦糖之前,记得先准备你需要的材料呀!

Caramelized sugar is simply a mixture of sugar and water cooked until it becomes syrupy.
焦糖就是细糖和水混合后,煮成糖浆。
Stirring constantly with a wooden spatula until the sugar begins to dissolve. When the sugar turn into caramel, remove the pan from the heat. 
持续地用木锅铲把白糖搅拌至溶解,当糖溶解成糖浆后,就熄火。
Then add water to the caramelized sugar and stir immediately.
然后在焦糖加入水后快速搅拌。

Girls,perfect caramel should be cooked until it is dark.
孩子,完美的焦糖应该煮成深褐色。

4 large eggs and 185g castor sugar.
4粒大型鸡蛋和185克细糖。
Break eggs into a mixing bowl.
把鸡蛋敲破然后倒进搅拌碗。

Beat eggs and castor with an electric mixer on medium speed until they are white. 
以中速度把鸡蛋和细糖用电搅拌器打至发白。
Pour caramel into the mixture and mix well.
把焦糖倒入混合物然后搅拌均匀。
330g all-purpose flour.
330克多用途面粉。

One teaspoon baking powder and one teaspoon baking soda.
一茶匙发粉和一茶匙苏打粉。
Sieve all purpose flour, baking powder and baking soda.
过滤多用途面粉,发粉和苏打粉。

Girls, sifting incorporates air into the flour which helps your baked goods to come out fluffy.
孩子,过滤可以让空气结合在面粉里,有助于我们烘培的产品更加松软。
Pour half of the dry ingredients into the wet ingredients and fold .
倒入一半的干材料入湿材料然后混合。
200ml coconut milk. Add the coconut milk and stir with a wooden spatula.
200毫升椰浆。加入椰浆然后用木锅铲搅拌。
Add the remainder of dry ingredients. Stir to combine.
加入剩下的干材料,搅拌至混合。

Girls,let the batter rest for at least 1 hour at room temperature. The longer you rest the batter, the better it is. Girls, you can set the mixture aside for overnight.
孩子,让面糊在室内温度里休息至少一小时,面糊静休的时间越久,效果越佳。孩子,你可把面糊留至隔夜。
Do not forget to add 1/2 teaspoon of salt into the batter.
别忘记加入1/2茶匙的盐入混合物里。
Prepare your steamer by setting up the wok filled with water, and get it boiling on high heat.
准备蒸具,在锅里装水,把锅里的水煮至沸腾。

Place cupcake liners into muffin tin.
在金属容器上垫上杯糕纸。
One bowl of melon seeds.
一碗瓜子。

Preheat the toaster oven and leave the melon seeds in there until browned. Roasted seeds are easy to make and even more delicious to eat.
弄热烤面包机,把瓜子烤至焦黄色,烤香瓜子过程容易,味道也很美味。
Pour batter into the cupcake liners. Topped with roasted melon seeds.
把面糊倒入糕杯纸,在马来糕上铺上烤过的瓜子。
Freshly steamed ma lai gao are just in time to serve. Bamboo steamer is one of mom's favorite kitchen tools.
新鲜出炉,是时侯享用的马来糕,竹蒸笼是妈妈偏爱的其中一种厨房用具。

Almond Cookies 杏仁酥饼

Almond cookies are prepared traditionally during the festive season of Chinese New Year, but you can make them whenever you want at home.
通常,每逢农历新年佳节,我们都会准备杏仁饼,然而如你喜欢,还是可随时在家里烘制。

这充满口感的酥饼是美好的下午茶甜品。
Other than  walnut cookies, our family members also love almond cookies.
除了核桃饼,我们家庭成员也喜爱杏仁饼。
As a young child, mom dislike the unique aroma of almond but as grow older, almond has become one of mom's favorite nuts.
儿童时,妈妈不喜欢杏仁独特的香味,然而随着年岁渐长,杏仁成为妈妈喜爱的一种坚果。
The ingredients are 175g of superfine flour , 57g of icing sugar , 100g of almond nibs , 90g of corn oil , 1/3 teaspoon of salt,3/4 teaspoon of baking powder , 1/2 teaspoon of baking soda and one large egg yolk.
材料是175克低筋面粉,57克糖粉,100克杏仁粒,90克玉蜀黍油,1/3 茶匙盐,3/4 茶匙发粉,1/2茶匙苏打粉和一粒大蛋黄。

Get ready the dry ingredients.
把干材料准备好。

Do remember to measure the baking powder and baking soda properly.
别忘了仔细地测量发粉和苏打粉。

Place super fine flour, icing sugar, baking powder, baking soda and salt into a large bowl. Stirring and then sifting them together.
把低筋面粉、糖粉、发粉、苏打粉和盐放进一个大碗里,混合后过滤。
Sifted flour. Sifting flour is so important when it comes to baking.
已过滤的干粉,孩子,过滤对是烘培非常重要。
Add the corn oil into the the dry ingredients.
把玉蜀黍油加入干材料里。

100g almond nibs. Toast the almond on a baking tray in a toaster oven until lightly browned (about 12 minutes).
100克杏仁粒, 在烤面包机里把杏仁粒烤成焦黄色,大约12分钟。

Add toasted almonds and mix until combined. Toasting releases the rich flavor nutty aroma in the almond. 
在混合物加入烤香的杏仁粒,然后搅拌至均匀。把杏仁烤香可释放其浓郁的杏仁果香。
The batter is ready to go.
准备要动工的面糊。

Roll the dough into smooth balls.
把面团揉成光滑的球状。
Line a baking pan with parchment paper.
在烤盘铺上烘焙油纸。

Place the dough balls onto a baking tray.
把球状的面团铺在烤盘上。

Brush the tops of the cookies with egg yolks.
在酥饼上涂上蛋黄液。

Freshly baked cookies right out of the oven.
新鲜从烤炉拿出来的酥饼。
