Sweet Corn Soup with Carrot and Potato 玉蜀黍萝卜马铃薯汤

A bowl of sweet potato, carrot and corn soup. It is perfect for a cold day. It contains a healthy dose of Vitamin A.
一碗马铃薯、萝卜和玉蜀黍汤是寒冷天气的完美选择,它拥有对有利我们健康的维他命A。

This Chinese soup is very nutritious. This recipe is for all who claim that they can't cook. It's so simple yet delicious。
这道华人风味的汤富有营养,这食谱特别留给不善烹饪的你我,这道佳肴既简易又美味。

Four fresh Pearl Corn which comes from Cameron Highlands.
四条来自金马伦高原的珍珠玉蜀黍。 
Chop the pearl corn into small segments.
把珍珠玉蜀黍斩成小段。
1340 gram of peeled potatoes.
1340 克削皮的马铃薯。
Girls, the way to keep peeled potatoes from turning brown is to submerge them in cold water.
孩子,避免削皮马铃薯变褐黄色的一个秘诀就是把马铃薯浸泡在冷水里。
Peel potato and cut into cubes.
把马铃薯削皮然后切成块状。

575 grams fresh carrot which cut into slices or cubes.
575克新鲜萝卜切成块状。

615g chicken breast boneless. Once the water is boiling, gently drop in the chicken meat.
615克无骨鸡胸肉。当水沸腾,轻轻把鸡肉放进沸水里。

Blanch until you see foamy impurities float to the top. Strain the water and rinse chicken in cold water.
用沸水把鸡胸肉烫白直到你看到泡沫杂质浮在水面上。把水过滤干净然后用冷水清洗鸡肉。

Girls,you can use lean pork, spare ribs or chicken breast for the meat base.

Bring a large pot of water to a boil.
把一锅水煮沸。

Put all prepared ingredients into a pot. Salt and pepper to taste.
把所有准备好的材料放进锅里,盐和胡椒调味。

Cook all the ingredients with lid on until boil. Then reduced heat to medium. Put the lid on the pot.
锅盖放置一边,待全部材料煮至沸腾,再转到中火,把锅盖盖上。

Simmer for 3 hours.
慢煮至3两个小时。

Pandan Chiffon Cake 班兰戚风蛋糕

Chiffon cakes are our family’s all time favourite dessert. This soft cake beautifully producing a wonderful aroma of pandan and coconut milk. It won’t let you down either.
这班兰戚风蛋糕是我们家庭喜爱的甜品,这带着完美班兰叶和椰浆香味的柔软蛋糕绝不会让你失望。

This cake baked to golden brown with natural green colour.
这蛋糕烤至金褐色,并带着自然的青绿色。

Girls, separate six large eggs into whites and yolks.
孩子,把六粒大鸡蛋分成蛋白与蛋黄。
Separating eggs is easier to do when they are cold from the fridge.
从冰箱直接拿出的冷鸡蛋较容易分开蛋黄与蛋白。
The ingredients are 6 large egg yolks, 228 grams of all purpose flour, 170 grams of castor sugar, 230 grams of coconut milk, 120 grams of corn oil, 1/2 teaspoon of salt and 1 teaspoon of baking powder.
材料是6粒蛋黄(体积大鸡蛋),228克多用途面粉, 170克细糖,230克椰浆,120克玉蜀黍油,1/2茶匙盐和1茶匙发粉。 
Sift all purpose flour, baking powder and salt into a medium bowl.
在器皿里过滤多用途面粉、发粉和盐。

Take 170 grams of castor sugar and pour it to the dry ingredients. 
把 170克细糖倒入干材料里。

Combine well.
均匀地混合。
Three ingredients are ready to go into the mixing bowl.
三种准备加入器皿里的材料。

Girls, wash and roughly chop pandan leaves. Blend with coconut milk.
孩子,把班兰叶洗干净再切成小条状,与椰浆搅拌。
Strain. Press the leaves hard. Green liquid should weigh 230g.
过滤,用力挤压班兰叶,这青色的班兰椰浆液要维持在230克内。

Add six egg yolks into the dry ingredients.
把六粒蛋黄加入干材料里。

Whisk the six egg yolks with the 120ml corn oil and 230ml green coconut milk to form an emulsion.
在器皿里加入六粒蛋黄和120毫升的玉蜀黍油和230毫升的青椰浆,搅拌至形成乳状液。
One teaspoon of Pandan paste. Girls, if want a totally natural pandan cake, just skip the pandan essence.
一茶匙的班兰糊。孩子,如果你想要完全自然的班兰蛋糕,可免去班兰香精。
Whisk with hand whisk until evenly green. Set aside.
用手的力以搅拌器把面糊搅拌至均匀的青色。放置一边。
6 large egg whites and 80 grams of castor sugar.
6粒蛋白液(体积大的鸡蛋)和80克的细糖。
Using an electric mixer, whip the egg whites on maximum speed for 5-8 minutes. It’s important not to overwhisk, Egg whites will turn grainy.
用电动搅拌器,在5-8分钟内,快速把蛋白打发。切记别打发过度,蛋白会有颗粒状。
Girls, add the 80 grams of sugar in three batches and beat well between additions. Continue to beat until stiff peaks form.
孩子,把80克细糖分成三个部分加入,在每一次加入蛋白后打发好,一直打发到形成硬性发泡。

Spoon out 1/3 of the beaten egg whites and fold into the green mixture.
舀出1/3的蛋白,然后和青色面糊混合。
Combine well then gently fold in meringue mixture. Girls,do not over mix the batter when you combine the yolk batter and the meringue batter .
把蛋白和青色面糊轻轻混合。孩子,在混合蛋黄糊和蛋白液时千万别搅拌过度。
Bang the pan on the table 2-3 times to remove air bubbles. Run a chopstick round side of pan to remove more air bubbles. Baked in preheated 170°C oven for 65-70 minutes.
在桌上敲一敲烘盘2-3次以拿掉气泡,可用筷子绕着烘盘以除去更多气泡,在170度摄氏的烤炉里烤至65-70分钟。

When out of oven, immediately invert the pan over a mug and let it cool completely.
当蛋糕从烘炉拿出来时,快速把烤盘倒反在一个杯上,让它完全冷却。

Lotus Root Soup with Peanuts 莲藕花生汤

Lotus root with peanuts is one of our family members favourite Chinese soup. 
莲藕花生汤是我们家庭成员喜爱的其中一种汤水。
Lotus root and peanuts are great pairing in soup.
莲藕和花生是这道汤水的好搭配。
Girls, Lotus Root Soup with Peanuts is a popular soup among the Chinese.
在华人社群里,莲藕花生汤相当受推崇。

300g of groundnuts.
300克花生。
Wash and soak peanuts in hot water. Discard the water and wash thoroughly. This can remove stale smell from the peanuts as well as the red colour of the skins.
洗干净花生再浸在热水里,倒掉水再洗透。这可除去花生的霉味及其红色的外皮颜色。

Fill a pot with filtered water then bring it to a boil. Pour the groundnuts into the pot.
把锅装满过滤的水,然后煮至沸腾,在沸水里倒入花生。
80g red dates. Red dates lend a mildly sweet flavor to the soup.
80克红枣,红枣为汤带来清甜的口感。
Rinse the red dates. Cut into half. Add into the soup.
把红枣清洗干净,切成一半,加入热汤里。
Remove skin from the lotus shoots and clean them before cooking. Girls,lotus root can strengthen our bodies and improving one’s appetite.
把莲藕的皮削掉然后洗干净,孩子,莲藕可以加强我们的体力,也增添我们的胃口。
670g lotus slices. Add into the soup. Cook until the lotus root slices start to change into a bit translucent looking.
670克莲藕片,加入汤里,煮至莲藕片开始呈现透明色。


Then add in 40g Dried Squid. Dried Squid can enhance the flavour the soup.
然后加入40克干鱿鱼。干鱿鱼可以增添莲藕汤的鲜味。
Girls, soak and rinse the dried squid in hot water before adding into the soup.
孩子,在还没有加入汤之前,先浸泡热水,之后冲洗干鱿鱼。

As for the base, pork is often used but you can substitute with chicken meat.
通常汤底都采用猪肉,你也能以鸡肉取代。

Boil a large pot of water until boil. Blanch the chicken meat for about 5 to 10 minutes. Drain. Girls, this process will give you a really clear soup.
把一锅水煮沸,把鸡肉烫白,大约5-10分钟,滤干。孩子,这个过程会让你的汤水更清澈。

 

Place all ingredients in a pot and bring to a boil. Reduce heat to low and allow soup to simmer for 3-4 hours.
把所有材料放进锅里,煮至沸腾,然后降下温度,让汤在滚热的状态继续煮3-4小时。
Season with salt according to taste. Serve warm in individual bowls.
加入适量的盐调味,以个别的碗添满,然后享用。

What a refreshing soup to go with meals. Dad couldn’t stop sipping this warm soup.
