Sausage Bun 香肠面包

This is an easy and basic recipe for bread that does not require much skill. Girls, kneading and shaping these adorable shapes is a fun project for both of you.
这是简易和基本的面包食谱,不需要很多技巧。孩子,揉捏和创造这些有趣的造型,对你们而言,绝对是有趣的活动。

These sausage buns are easy to make and well worth the effort.

The nice thing about making your own bread is eating it while still super fresh.

Mom really enjoys the process of making our own bread.
妈妈很享受亲自制作面包的过程。

The ingredients are 345 grams of bread flour, 55 grams of all purpose flour, 80 grams of castor sugar, 1/2 teaspoon of salt, 1 teaspoon of dried yeast, 1 large eggs(52-54 grams), 212 grams of cold fresh milk and 50 grams of butter.
材料是345克高筋面粉,55克多用途面粉(中筋面粉),80克细糖,1/2茶匙盐,1茶匙干酵母菌,1粒大鸡蛋(52-54克),212克冷鲜奶和50克牛油。

Pour 212 grams of cold milk into the bread bucket.
把212克的冷牛奶倒入面包桶里。
Then gently pour a big farm fresh egg (from the fridge) into the bucket.
然后轻轻地加入一粒大甘榜鸡蛋(从冰箱)进面包桶里。
Pour the bread flour and all purpose flour into the bread bucket.
把面包粉和多用途面粉倒进面包桶。
Place sugar on the left side and salt on the right side.
把细糖放置面粉左边,盐放置在面粉右边。
Make a well in the center of the flour and add 1 teaspoon of yeast. Cover the yeast with flour.
在面粉中间弄一个井,加入1茶匙的酵母菌,再用面粉盖上。
Girls, using bread maker for dough kneading. Set the machine to " dough". This process takes one and half hour. 
孩子,用面包机来揉面团,在面包机上设定“面团”,这过程需要1小时30分钟。
After 20 minutes, put 50 grams of butter into the bread machine.
20 分钟后,在面包机里加入50克的牛油。
Let the machine continue its process.
让面包机继续其过程。

After 1 and half hour, take out the dough from the bread bucket. The total weight of the dough is 806 grams.
1小时30分后,从面包桶拿出面团,面团的总体积是806克。
Transfer the dough to floured working surface. Gently squeeze all the air out. Kneading is the process of working in some more flour and changing the texture of the dough.
把面团移至沾有面包粉的表面,轻轻地排出空气。揉捏是一个以面包粉搓揉的过程以改变面团的结构。
After shaping the dough, divide dough into 10 equal pieces. Shape into smooth balls with some bread flour. Place them on the baking tray. Each dough is 80-81 grams.
当面团成型后,把它分成10粒平均的部分。用面包粉揉成光滑的球状,再把它们放在烤盘上 ,每部分面团的重量为80-81克。
Let the dough rest for 15 minutes before shaping into buns.
在还没有制成面包之前,先让面团静休15分钟。
After 15 minutes,flattened the dough by a wooden roller.
15 分钟后,把面团用擀面棍辗平。
Place your sausage on the center of each dough .
把香肠放置在各面团的中间部分。

Using kitchen scissors, cut the sides of the dough into strips.
用一把厨房剪刀,把面团的两边剪成细条。
Begin to cross each strips to the opposite side.
开始把每个细条交叉至相对的方向。

Folding the strips inwards alternatively from both sides to form pleats.
把细条向内交替对折,让两边形成打褶状。
Mom loves the shaping of the rolls.
妈妈很喜爱面包制作的造型。

Cover with wet towel. Let the buns rest for 45 minutes until double in size.
用一条湿布盖上,让面包静休45分钟直到面包双倍膨胀。
Bake in 170 degree celsius in a preheated oven for 15-20 minutes or until golden brown.
以170攝氏在预热的烤炉里烤至15-20分钟或直到面包变成褐黄色。
Brush the sausages bun with 1 egg yolk whisked with 3 teaspoons milk.
把香肠面包涂上一个蛋黄与3茶匙的牛奶搅拌。

Lemon Poppy Seeds Chiffon Cake 柠檬罂粟籽戚风蛋糕

这是一个带着柠檬独特香味的柠檬戚风蛋糕。

After wash the lemon thoroughly, mom uses a grater to to grate the lemon peel.

Two tablespoon of lemon zest from two fresh lemons.
从两粒柠檬取得的两大汤匙柠檬碎。
50 grams freshly squeezed lemon juice from two lemons.
50克从两粒柠檬新鲜榨取的柠檬汁。

The ingredients are ( egg yolk mixture) 5 eggs yolk, 55 grams of corn oil, 50 grams of fresh lemon juice, 10 grams of cold water, 125 grams of superfine flour, 30 grams of castor sugar and 4 teaspoon of poppy seeds.
( egg white mixture) 6 eggs white, 1 tablespoon of lemon juice and 60 grams of castor sugar.

材料是(蛋黄糊)5粒蛋黄,55 克玉蜀黍油,50克新鲜柠檬汁,10克冷水,125克低筋面粉和30克细糖和四茶匙罂粟籽。
(蛋白糊)6粒蛋白,1 大汤匙柠檬汁和60克细糖。

Separate one egg at a time. Letting the white fall into a bowl and placing the yolk in another bowl.
把鸡蛋一粒接一粒分开,让蛋白流进一个碗里再把蛋黄置入另一个碗里。

Lemon poppy is one of our all-time favorite flavor pairings in baking goods. Mom uses four teaspoon of poppy seeds in this recipe.
罂粟籽是我们烘焙时其中一种最爱的配对。在这食谱,妈妈用四茶匙的罂粟籽。

Sift together superfine flour and 1/2 teaspoon of baking powder.
过滤低筋面粉和1/2茶匙的发粉。
In a large bowl, whisk together 5 egg yolks, 30 grams of castor sugar and 55 grams of corn oil.
在一个大容器里,搅拌5个蛋黄,30克细糖和55克玉蜀黍油。
Then add in sifted flour, 4 teaspoon of poppy seeds, 50 grams of lemon juice and 10 grams of cold water alternately.
然后分次又交错地加入过滤的面粉,4茶匙的罂粟籽,50克柠檬汁及10克的冷水。
Girls, do not forget to add in 2 tablespoon of lemon zest.
孩子,别忘了加入2汤匙的柠檬碎片。
Beat until smooth and put aside.
搅拌至光滑,放置一边。
Whisk egg whites to foamy at medium speed and add in sugar. Whisk egg whites to peak form.
在另一个碗里放入蛋白,用电动打蛋器稍微打发泡沫后,分次放入细糖打发致硬性泡沫。

Those are some stiff peaks.
这些就是硬性泡沫。
Fold the eggs white mixture into the batter. 
把蛋白和面糊上下混合。
Tap the pan lightly on a table top to get rid of any trapped air bubbles. 
在桌面上轻敲烤盘以排除被困住的大气泡。
Invert the pan immediately.
马上把烤盘倒置。
When cake is cool, run a thin knife around the side of the pan and centre tube to loosen cake. Cut and serve. 
当蛋糕冷却后,就用一把小刀绕着烤盘的边缘和中间把蛋糕弄松拿出。切开然后可享用。
