Steamed Chicken with Chinese Goji berries & Chinese Angelica 枸杞当归蒸鸡

Girls, this herbal steamed chicken takes only 30 minutes to prepare. It is surprisingly easy. It really pays off to take your time to cook nutritious food.

Seven to ten slices of Angelica or Dang Gui. Girls, Dang Gui has a very important place in women's health.
当归 7-10小片, 当归对妇女的健康占重要的位置。

Goji berries 15g. Eating goji berries helps to improve eyesight and strengthens the immunity system.
枸杞15克。枸杞有助于改善视力及增强免疫系统。

5-8 pieces of Red Date. Red Date is touted as a “natural vitamin supplement” for its rich nutritional values.
5-8 个红枣,红枣被捧为“自然维他命的辅助剂”,因它丰富的营养价值。


Cutting up three chicken thighs into small pieces. Rinse each individual piece of chicken well under the running hot water. Pat the chicken dry with paper towels. Evenly rub salt into chicken.
把三个鸡腿切成小块,用热水把每块鸡烫洗干净,用纸巾把鸡块抹干,再用盐巴均匀涂在鸡身上。
Cut the red dates into half.
把红枣剪成对半。
Cut the spring onions into short lengths.
把青葱剪成短短的小段。

Prepare all your ingredients before you begin cooking.
在你开始下厨前,先准备好所有材料。

Soak Angelica or Dang Gui in hot water. Reserve the water for later use.
当归浸泡在热水里,保留这碗水,待会要使用。
Soak red dates in hot water. Reserve the water for later use.
红枣浸泡在热水里,保留这碗水,待会儿使用。

Place all the ingredients on a metal plate, combine the water from soak red dates and soak Angelica.
把所有材料放在一个铁盘上,加入当归水和红枣水。
Preheat steam cooker. Cook for 10 minutes, then add the spring onion. 
预热蒸炉,蒸大约十分钟, 然后加入青葱。
Steam for another 5 minutes or until the chicken is cooked through.
再蒸另外5分钟或直到鸡肉熟透为止。

Serve warm with rice.
蒸好了趁热配饭吃。

Stir-Fried Eggpplants with Dried Shrimp 蒜香虾米炒茄子

There are many different types of eggplants around the world. They are vary in size and colours.
在这个世界上有很多不同种类的茄子,这些茄子各有不同的大小和颜色。
Girls, Chinese eggplants have a thinner skin. Larger or over mature eggplants will be more bitter than smaller just ripe eggplants.
孩子,华人的茄子有较薄的外皮,体积较大又过于成熟的茄子比体积小又刚成熟的茄子更多苦味。

Prepare three eggplants weigh 545g.
准备三条茄子,重量为545克。
Girls, If you are not deep frying immediately, do remember to soak eggplants in salt water for 30 minutes so that the flesh won't turn brown.
如果你不是马上炸茄子,请记得把茄子泡在盐水里30分钟,这样茄子才不会变成褐色。

Cutting the eggplants into long strips.
把茄子切成长条状。
 
Dried Shrimps 60g. Girls, better quality fresh shrimps gives a better color and the meat is firm.

Clean the dried shrimp and remove the dirt. Then soak in hot water for 30 minutes.
清洗虾米然后除去肮脏的杂碎,接着浸泡在热水里30分钟。

Drain and chop soaked dried shrimps finely.
把浸泡后的虾米滤干后切碎。
Ready peeled garlic 55g. Garlic is an integral part of many savory dishes.
准备剥好皮的蒜头55克,蒜头是菜肴不可少的材料,它能为许多菜肴增添美味。
Mince garlic with a knife. Girls, you can mince with a knife or a garlic press.
把蒜头剁碎,孩子,你可用刀或者压蒜器。
Cutting few stalks of spring onion with a pair of kitchen scissors.
用一把厨房专用的剪刀把几束青葱剪开。

Cut spring onions into pieces.
把青葱剪成小块状。

All the ingredients had prepared. Getting ready to cook .

Heat up oil in your wok for deep-frying. Girls, If you see a good deal of bubbles forming around the chopstick, the oil is ready for frying.

Do not turn down the heat too much. If heat is not hot enough, the eggplant will begin to absorb too much oil.

Place the strips eggplants into the heated wok. Fry for 5 minutes or until its bottom part turn brown.
把片状的茄子放进热锅里,油炸5分钟或直到茄子变成浅褐色。


Add all the eggplants back in wok for a quick mix and fry. It can prevent the eggplant from soaking up too much oil.
把全部茄子再放入热油锅里然后快翻炒。这可避免茄子吸入太多的油。

Drain out the excess oil from the eggplants.Girls, do you like this beautiful, deep-coloured vegetable?

Heat the wok with cooking oil and brown the garlic in medium heat.
在锅里弄热油,以中火把蒜米爆香。

Add in dried shrimp. Then fried eggplants. The strips of eggplants completely absorbed the taste and aroma of the dried shrimps.
加入虾米,再加入炸香的茄子,茄子会吸收虾米的味道与香气。

Add four tablespoon light soy sauce and four tablespoon dark soy sauce. Girls, When the eggplants has become slightly soft, add light soy sauce and dark soy sauce.
加入四汤匙的酱青和四汤匙黑酱青,孩子,当茄子稍柔软时,就加入酱汁。
Lastly add in one and half tablespoon sugar.
最后加入一汤匙半的白糖。

Hot Honey Lemon Tea 热蜜糖柠檬茶


Girls, do you want to make a quick honey lemon tea to soothe your throat when you have a cool?
孩子,当你患上感冒时,是否想在短时间内弄一杯蜜糖柠檬茶来舒缓你的喉咙呢?
Here are the simple steps to make hot honey lemon tea. Ready in less than 30 minutes.
这里有简单的步骤,在少过30分钟内就可完成任务。


Lemon juice helps us to combat cold and honey soothes the throat. 
柠檬汁帮助我们与感冒抗战,至于蜜糖则可舒缓喉咙疼痛。

Put 1200ml water into a pot. Place on the stove and bring to the boiling point. Drop one tea bag into the boiling water. (Girls, you can use 2-3 tea bags if you really like the strong tea taste. ) Let the tea infuse in the water for 6 to 8 minutes. 
把1200毫升的水放进锅里,在煤气炉上煮至沸腾,在沸水里放一包茶包(孩子,如果你喜爱更重的茶香味,你可用2-3包茶包)让茶水浸泡在水里6至8分钟。
Girls, you can make sweet tea with any kind of tea, but Lipton are mom's usual choice. After steeping tea bag in the hot water for 8 minutes, gently squeeze excess water from tea bag. Then remove the tea bag.

Remove tea bag. Girls, be very careful not to overcook. Bitterness in tea is caused by overcooking.

Add rock sugar if the water turned brown. Mom likes to use rock sugar for tea because it is the kind of sweetness where mom enjoyed the most.

Rock sugar sweetens tea without overwhelming the natural flavour of the tea.

Add in 70-80 g of rock sugar. Use low fire to boil until sugar dissolved. Increase sugar as needed to your sweetness level. 
加入70-80克的冰糖然后用小火煮至溶解,增加糖的分量如果你想要更甜。
Soak one lemon in a bowl of warm water with baking soda. Baking soda can remove the wax from the skin of the fruits.
把一个柠檬浸在一碗温水里加入泡打粉,泡打粉可以除去水果外皮的蜡质层。
Place the lemon on a cutting board and cut one half into four slices.
把柠檬放在砧板上然后把半粒柠檬切成四片。

Squeeze the juice from the other half into a bowl.
用另半个柠檬在碗里挤出柠檬汁。
Mix the fresh lemon juice into the hot tea.
把新鲜榨取的柠檬汁混合进热茶里。

Girls, before adding honey, wait for the lemon tea to cool down instead of hot.

Stir 60-70ml honey into the mixture.

Pour mixture into drinking glasses and serve.
