Luffa fried with scrambled eggs and goji berries 丝瓜炒芙蓉蛋和枸杞

A traditional Chinese stir fry recipe using fresh luffa, eggs and goji berries. It is very suitable to serve in hot humid weather in Malaysia.
这道丝瓜炒蛋和枸杞是华人的传统佳肴,它用的材料是丝瓜,鸡蛋和枸杞,这菜肴很适合炎热潮湿的马来西亚长夏。

Girls, use fingers to press lightly when choosing. The heavier luffa of the same breeds and same size contains more moisture.
孩子,选择丝瓜时,用你的手指轻轻地按,同样体积和种类的丝瓜,越重的丝瓜就越多水分。

First, wash well and then peel off the tough outer ridges of luffa with peeler.
首先,把丝瓜清洗干净,然后用削皮刀把凸起的粗外皮削掉。

Cut luffa into bite-sized wedges.
把丝瓜切成小块状。

Girls, the eggs mom uses actually have no brand but are sold as kampung eggs. The kampung eggs have much higher vitamin and mineral content because they come from happy healthy chickens.
孩子,妈妈常用没有牌子的甘榜鸡蛋,甘榜鸡蛋含有更高的维他命和矿物质因它来自快乐健康的甘榜鸡。
Kampong eggs, which usually produced orange-yellowish egg yolk. The yolk is bigger when compared to battery hens.
和农场鸡蛋比较,甘榜鸡蛋的蛋黄较橙黄色, 蛋黄体积较大。

In a medium mixing bowl, break 4 eggs into it.  
在一个中型碗内,敲破四粒鸡蛋。
Add in 1 tablespoon of soy sauce and mix well.
加入一汤匙酱青, 混合均匀。

Add some oil in a frying pan and stir fry scrambled egg at medium heat.
在平底锅加入少许油,然后在中火上煎芙蓉蛋。
Gently transfer the scramble eggs to a plate.
轻轻地把芙蓉蛋移到一个盘上。
Rinse and soak dried wolfberries or goji berries in hot water for about 10 minutes.
清洗枸杞然后把枸杞浸泡在热水里大约10分钟。
Slice the garlic into thin pieces.
把蒜头切成薄片。

Heat oil in a pan over medium-high heat. Add garlic and stir-fry until light brown and fragrant.
在平底锅上用中火把油烧热,加入蒜头然后炒至浅褐色及发出香味。
Stir-fry until light green and translucent. Add in the the dried wolfberries or goji berries with hot water.Then season with a pinch of salt. (can add rice wine to taste)
炒拌直到丝瓜变成浅绿色或直到透明,加入枸杞和热水。然后放入一撮盐调味。(可加入米酒如你喜欢)

Spread out the luffa on the frying pan and pour the scrambled eggs over the luffa.
把丝瓜铺放在平底锅上然后倒入芙蓉蛋。

It is ready to serve. This dish is great served with rice.
可以准备上桌了,这道菜肴配饭真棒。
