Cranberry Walnut Butter Cup Cake 曼越莓核桃牛油杯子糕

Girls, when you pointed the picture and said “Mom, can you make this for us?” Of course I would. Dad and mom love walnut and this cake is just perfect as our afternoon snack.
孩子,当你们指着照片问:“妈妈,你可以做这些杯子糕给我们尝尝吗?”当然可以孩子。爸爸妈妈喜爱核桃,这杯子蛋糕是下午茶的绝佳茶点。
These cup cakes are flavourful and buttery.

This cranberry walnut butter cake recipe is a keeper. Mom will make it over and over again. 
这蔓越莓核桃牛油蛋糕是值得珍藏的食谱,妈妈将会不厌其烦地制作一次又一次。
The ingredients are 250 gram of butter, 180 gram of castor sugar (divided into two, 90 gram per portion), 205 gram of multi purpose flour, 100 gram of fresh milk, 5 gram of baking powder, 100 gram of toasted chopped walnuts, 4 large eggs – separated into egg whites and egg yolks and 60g of cranberries.
材料是250克牛油,180克细糖(分成90克两部分),205克多用途面粉,100克鲜奶,5克发粉,100克烤香核桃,四粒大鸡蛋-分成蛋白和蛋黄和60克曼越莓。
Golden Churn Butter 250g. Golden Churn Tin Butter brings so much fragrance to the cake.
金桶牛油 250克,金桶牛油为蛋糕带来许多奶香味。

100 grams toasted walnuts. Walnuts lightly toasted to intensify their flavour.
100克烤香核桃,核桃稍微烤以增进其芬芳。

60g of cranberries.
60克曼越莓果干。

With an electric mixer on medium speed, beat butter and sugar until pale and fluffy, 5-7 minutes.
用电拌器以中等速度,把牛油和白糖搅拌至白色和松软,5-7分钟。
Girls, separate egg yolks and egg whites carefully with an egg separator.
孩子,用鸡蛋分离器把蛋黄和蛋白分开。

Add the egg yolks, one at a time, and continue beating until incorporated.
加入蛋黄,一个时间内加一粒,继续拌打至均匀。
Sieve together the flour and baking powder.
过滤多用途面粉和发粉。


Reduce speed to low and add flour mixture. Girls, avoid over mixing.
减低速度,然后加入面粉。孩子,避免过度搅拌。

Pour over the cranberry and walnut mixture. Remember to leave aside half of the cranberries and walnut for decoration.
倒入蔓越莓和核桃,切记留一半的蔓越莓和核桃作为装饰。

Use the mixer’s slowest speed to stir the batter until well combined. Do not over mixing. 
用低速度把混合物搅拌至均匀,别过度搅拌。
Add the fresh milk and fold until well mixed.
加入牛奶再拌入面糊里,搅均。
In a clean mixing bowl, whisk the egg whites until foamy. 
在一个干净的容器,把蛋白和细糖快速搅拌至白色和泡沫状。
When the volume expands, add in the sugar. Beat the eggs whites until they are stiff enough to form firm peaks or until all the sugars dissolved.
当蛋液的体积增多了,加入细糖,用搅拌器打至蛋液成坚固形或直到细糖溶解。
Spoon the egg whites into the batter.
把蛋白液倒入面糊里。

Gently fold in the remaining meringue until no white streaks remain.
轻轻拌入蛋白液直到面糊没有蛋白条纹。
Pour batter into paper cup.
把面糊倒入纸杯里。

Preheat the oven to 160 degree Celsius. Sprinkle some walnuts and cranberries on top.
把烘炉预热160度,在杯子蛋糕上撒些曼越莓果干和核桃。
Girls, you need to keep an eye on the cake and know how your oven behaves so you can make the necessary adjustments.
孩子,你要多了解你烤炉的情况,并用眼观察蛋糕烘烤的时间以作出调整。
Transfer to oven. Then bake until cake becomes golden brown. 
把烘炉预热160度,蛋糕移到烘炉,然后烤至金黄色。
Bake about 30-35 minutes or until the cake tester inserted in center comes out clean.
烘烤大约30-35分钟或直到蛋糕测试针插入中间沒有沾黏。
